Orange Shortbread Cookies
I don't know about you, but I think no spring is complete without a citrusy bake and these cookies are perfect for it.

These orange buttery shortbread cookies are filled with a sweet orange curd. Bonus points if a cute cookie mold is used!
Orange Shortbread Cookies
Ingredients:
Orange Shortbread Cookies:
- 4 Tbsp Sugar
- 2 Tbsp Orange Zest
- 1/2 Cup Butter, Softened
- 1 tsp Vanilla Extract
- 1 1/4 Cup Flour
- 2 Tbsp Milk
Orange Curd:
- 1/2 Cup Orange Juice
- 7 Tbsp Sugar
- 2 Egg Yolks + 1 Egg
- 4 tsp Cornstarch
- 4 Tbsp Butter
Instructions:
Orange Shortbread Cookies:
In a bowl, add sugar and orange zest. Use your fingers to rub the orange zest into the sugar.
Add butter, vanilla extract and flour. Use your fingers to rub the butter into the dry mixture until it resembles bread crumbs.
Add milk and mix and knead until a dough form.
Divide the dough into tablespoon sized balls and place them onto a baking tray lined with parchment paper.
Coat your cookie mold in flour and stamp the design onto each dough ball.
Place it into the fridge for 30 mins.
Bake at 350°F for 10-15 mins until the bottom of each cookie is golden brown.
Orange Curd:
Add orange juice, sugar, eggs and cornstarch into a saucepan. Mix until combined.
Over medium heat, add butter and cook until the mixture has thickened.
Take it off the heat and let it fully cool down.
To assemble, flip half of the cookies onto its flat slide. Place a tablespoon of orange curd onto it.
Place the remaining cookies on top to create sandwiches.
