Strawberry Lemonade Bars
When life gives us lemons...
When life gives us lemons... we make lemon bars! While summer might not be here yet, we can get a taste of it through this sweet treat. Inspired by the classic summer drink, this lemon bar features a buttery shortbread crust and is topped with a layer of lemon and strawberry filling.
Strawberry Lemonade Bars
Ingredients:
Shortbread Crust:
- 3/4 Cup Flour
- 1/4 Cup Sugar
- A Pinch of Salt
- 5 Tbsp Cold Butter
- 1 Tbsp Milk
Strawberry Lemonade Filling:
- 2 Eggs
- 7 Tbsp Sugar
- Juice from 1 Lemon
- 2 Tbsp Flour
- 2 Tbsp Freeze Dried Strawberry Powder
Instructions:
Preheat the oven to 350°F and line a loaf pan with parchment paper.
In a bowl, add flour, sugar, salt and butter.
Use your fingers to rub the butter into the dry mixture until it resembles bread crumbs.
Add milk and mix until combined.
Pour the shortbread dough into the loaf pan.
Press down the dough using the back of a spoon to form an even layer.
Bake for 15-20 mins.
To make the filling, add eggs, sugar, lemon juice and flour into a bowl. Mix until combined.
Divide the batter in half. In one half, add freeze dried strawberry powder and mix until combined.
After the shortbread crust is done baking, pour in the lemon filling. Bake for 5-10 mins.
Pour in the strawberry filling. Bake for 15-20 mins.
After it is done baking and cooled down, place it into the fridge for at least 1 hour
for it to set.
